It's so good!

I'm at home after my Algebra class! This class is killing me. I bought some fish.  I'm cooking a dish called Tchep Gen. It's from Senegal. It's a dish made of fish, vegetables and red rice. I remember loving it back home. Damn it was good. Just hope I can make it work even thought the ingredients are kind of different. You can't duplicate the real thing.
I just pour myself a good glass of Margarita.  Feeling tipsy. But God knows I needed it. Too much stress school called me at school today and I have to leave class and rush pick up my daughter who was sick.
However, I will enjoy my dish. It 's sometimes a good way to reconnect with my roots. Especially when my mom comes to visit. She brings me food  and ingredients from back home. So I always have some stuffs to make a real good dish. I remember how good it was to eat things from my back yard. Fresh and healthy. Since I got here I eat quick food and I start getting weight so fast. I need to work out.
I like to cook healthy and fresh food. It's so simple and so good. I understand that it's really hard to cook at home because of the American life style. Always on the run. But I take every chance I get to cook for my family.
